Tenth Anniversary Trip

We just celebrated our tenth anniversary. We took a trip to Cancun, Mexico. It was one of the best vacations ever. It was SO relaxing! We almost got to experience our first hurricane. Thankfully, it ended up just a tropical storm by the time it hit our resort! Praise the Lord! I'm so thankful for my husband and for the ten wonderful years we have spent together. He is my best friend and love of my life! God has truly blessed us!

One of my good friend's posted this on her blog and I thought it was a cute idea so I'm copying it onto my blog! :-) Instead of telling what things I like, I'm going to tell you what things Isaac likes. And these are his words!


What is your favorite color? blue

What is your favorite food? Chicken and french fries

What is your favorite animal? Lion, Tiger, and Bear (oh, my!)

What is your favorite TV show? Cat in the Hat

What is your favorite movie? Veggie Tale Pirates (The Pirates Who Don't Do Anything)

What kind of music do you like? Patch the Pirate

What are you really good at? jumping jacks (not what I was going to put down! lol)

What are you not so good at? not listening in church (I would have to agree there!)

Who are your best friends? Caleb, Elijah, and Landon

What is your favorite thing to do at home? Play playdough and the Wii

What do you want to do when you grow up? be a firefighter

If you had a lot of money, what do you think you would buy? lots of toys

What is the best thing about your mom? Her heart (awwww....he just melted it!)

What is the best thing about your dad? Wrestling with him

What makes you cry? when people hurt my feelings

What does love mean? I love you! You gotta love God in your heart.

What do you like to sleep with - doll, blanket, etc? my pirate (it's a tater tot pirate from Sonic)

At what age do you become an adult? 100 (oh my!)

If you could change one rule in our house, what would it be? be nice to me and don't give me anymore spankings (LOL!)

What is something that makes our family special? When we have family night

How would the world be different if animals could talk? We couldn't talk...that would be weird!

If you could grow up to be famous, what would you want to be famous for? For the circus

What is the hardest thing about being a kid? I can't stay sitting in the middle of my chair (he is always hanging off the edge of his chair when he eats dinner and then he falls off and hits his head. We are ALWAYS telling him to stay in the middle of his chair.)

If you were a teacher and the kids in your class wouldn’t listen, what would you do? I would say "Sit down in your chairs!"

Where is your favorite place in the world? Africa

If you could travel back in time 3 years and visit your younger self, what would you say? Horray!

What would be the hardest thing if you were blind? I couldn't see and would be bumping into the wall.

If you could make one rule that everyone in the world had to follow, what would it be? Be good!

Chicken Enchiladas


Chicken Enchiladas

1 small onion, chopped
1 clove garlic, minced
1 Tblsp. oil
1 lb. boneless, skinless chicken breast, cooked, shredded
1 1/2 cups salsa, divided
4 oz. cream cheese
1 Tblsp. cilantro, chopped
1 tsp. ground cumin
1 cup shredded cheddar & monterey jack cheese, divided
1 4oz. can chopped green chilies, drained
Flour tortillas

Cook and stir onion and garlic in oil in large skillet on medium heat 2 minutes.
Add chicken, 1/4 cup salsa, cream cheese, cilantro, and cumin. Cook until heated through, stirring occasionally.
Add 1/2 cup shredded cheese and green chilies; mix well.
Spoon about 1/3 cup chicken mixture onto each tortilla; roll up.
Place, seam side down, in 13x9 inch baking dish; top with remaining 1 1/4 cups salsa and 1/2 cup of cheese.
Bake at 350 for 15-20 minutes or until heated through. Makes 4 servings.

Funny conversation with Isaac today......

Isaac: "Mommy, do bears and tigers poop?"
Me: "Ummm....yes...."
Isaac: "Do they poop in the grass?"
Me: "Yes.....all animals poop outside in the grass."
Isaac: "But we poop in the toilet, right?"
Me: "Yes!"
Isaac: "And we're God's sheep, right?"
Me: "Yes...."
Isaac: "So, when we're God's sheep, we poop in the grass?"
Me: "NO! We don't ever poop outside or in the grass!"
Isaac: "But, if we're God's sheep, we have to poop outside because we're sheep."
Me: "It's an analogy that we are sheep. It's kind of like pretend. We aren't REALLY sheep. God just calls us his sheep. So, we NEVER poop outside."
Isaac: "Oh....."

Potato Chip Chicken and Pepper Jack Easy Mac

Potato Chip Chicken

1 4oz. pkg. potato chips, crushed and mixed on waxed paper (or shallow dish)
1/4 tsp. garlic salt
Dash of pepper
4-8 chicken breasts or legs
1/2 cup butter, melted

Dip chicken in melted butter. Roll in mixture. Place in pan, skin side up, not touching. Pour remaining butter and crumbs over all. Bake at 375 degrees for 1 hour.



Pepper Jack Easy Mac

2 cups (8 oz.) dry elbow macaroni
2 cups (8 oz.) shredded cheddar cheese
2 cups (8 oz.) shredded pepper jack cheese, divided
1 can (12 oz.) evaporated milk
1/2 tsp. ground black pepper
chopped jalapenos (optional)
1/2 - 1 cup broken tortilla chips (your choice of color)
1/4 - 1/2 tsp. crushed red pepper (optional)

Preheat oven to 350 degrees. Lightly grease a 2 1/2 quart casserole dish. Cook macaroni in large saucepan according to package directions; drain. Return to saucepan. Add cheddar cheese, 1 1/2 cups pepper jack cheese, evaporated milk, black pepper, and jalapenos to macaroni; stir until combined. Pour into prepared casserole dish. Combine remaining 1/2 cup pepper jack cheese, tortilla chips, and red pepper flakes in small bowl. Sprinkle over the top. Cover tightly with foil. Bake for 20 minutes. Uncover; bake for an additional 10 minutes or until lightly browned. Makes 8-10 servings.
